MIXED NOODLES WITH FISH
The easiest way to make this is to get the stir fry from Sainsbury’s or Ocado and cook it for about 5 minutes in a pan with some butter and salt and pepper to taste. If you have an adventurous child, a pinch of chilli powder and/or garlic wouldn’t go a miss. The mixed veggies don’t have any peas in them so you can always add the peas into the mix as well.
Once that is done, take it out and leave on a side.
Boil the rice and mix the vegetables in.
Using the same pan you used for the vegetables (to minimise the butter consumption) add a couple of eggs and scramble them making sure the pieces remain slightly larger and more cooked than your average scrambled egg. Add to the rice.
The fish that works best with this mix is a lovely bit of halibut or monk fish as they are more meaty. You could also add some prawns. You can grill the fish in a pan with some garlic, butter, salt, pepper and a dash of lemon juice and mix it in or serve on the side depending on your little one. Again if your child has a taste for something a little different, you could try adding a pinch or two of curry powder.
