GRILLED SARDINES

The best sardines to use for kids are the tinned kind as there are basically no bones to deal with. Furthermore, it has been documented that actually, tinned sardines are far more nutritious than the fresh kind. I usually buy the John West Sardines in Olive Oil. So, here goes..

Take a couple of tins of sardines, drain well and place on a baking tray. (I use the oil from one tin to grill about three tins of sardines).

Sprinkle some roasted curry powder, pepper and mashed garlic on top.

Add a dash of light soy sauce and tomato ketchup and chop some onions and add towards the end so the onions don’t get too burned.

Keep on a medium heat until crispy golden brown.

Take out and serve with white rice or buttered pasta.

Another way of serving this is, in a fajita. One way that my little one loves to eat it, is as follows:

Mash up the grilled sardines, add to a mashed up boiled egg, mix in a little grated cheddar,  roll it up and warm in a microwave until the cheese is melted. Cut the fajita in half and serve.

Grilled Salmon

PAN FRIED SALMON, ASPARAGUS AND EGG

Melt some butter in a pan, add some garlic paste and add a fillet of salmon. Sprinkle some pepper and salt on the skin and the under side of the salmon and squeeze a little lemon over it. Let it brown. When the skin is crispy and the under side is golden, take out of the pan.

Fry and egg, sunny side up and add to plate. (You can also add a 3/4 boiled egg (as long as it is a runny egg) because usually kids like to swish the salmon in the egg before eating it!!!

Cut asparagus into 3/4 inch pieces. Melt butter in a pan and add the asparagus. Sprinkle some pepper over it. When the asparagus starts looking golden and crispy, take it out and serve.
